This healthy cucumber snack and it is so easy to make and tastes delicious. Cucumber’s increase your energy and boost your metabolism. The olive oil is a healthy fat and lemon juice helps detox and cleanse your blood of impurities.
· Cucumbers. I love small snack cucumbers, they have more reach taste.
· Olive Oil
· Lemon Juice freshly squeezed
· Dill. Latvians love dill. We manage to use it almost everywhere. Try to avoid dill from supermarkets, they are tasteless grass. I buy them from the local Turkish shop- dark green with intensive flavors.
Slice the cucumbers. Finely chop the dill and add. In a small bowl, whisk together the lemon juice, lemon zest and olive oil. Season to taste. The oil and lemon juice should just be enough to cover the cucumbers and it will soak in.
While the salad comes together fast, the secret to making it special is to let it sit so the ingredients can mingle and soak into the cucumber slices. If all you have is 30 minutes that will be enough time; if you can let it sit overnight, that’s even better.
